Fennel (Foeniculum vulgare) is not only a fine culinary herb its delicate, feathery foliage makes it an eye-catching accent plant. Combine bronze fennel with white (roses, alyssum), silver (irises, dill, lambs ears, cineraria) or gold (Duranta Sheena's gold, Abelia grandiflora) for some garden alchemy. Fennel grows easily, likes well-drained soil and will thrive in full sun or morning sun. It can grow up to 150 cm. Don't grow next to coriander, wormwood, bush beans, cucumber, tomatoes or caraway. Fennel leaves improve the texture of compost.

Harvest fennel leaves throughout summer. A herbal infusion (tea) from the leaves or seeds is an excellent tonic, aiding digestion, improving memory and promoting weight loss. Finely chopped fennel leaves can be added to green beans, salads, fish, as stuffing for chicken, or mixed with cream cheese. Braai fish on a bed of dried fennel stalks.
