How to Use the Soup-er Variations
For each of
the soups in our soup recipe book you’ll find a selection of
“Soup-er Variations” that will add endless variety to your soup
recipes.
Simply add one
or more of the fresh herbs and spices listed under the “Soup-er
Variations” to every four cups (1000 ml) of your basic soup
recipe.
If you are not
familiar with the tastes and aromas of herbs, avoid including as
many herbs as possible. You do not want to end up with a great
tasting soup and not being able to tell which one or two herbs
actually did the trick. Try to limit yourself to about three or
four at any given time.
The exception
being the bouquets garnis, of which I have included at least one
recipe for each basic soup. They will give you an indication of
how different herbs can complement each other, and the soup they
are flavouring. Use them as ideas for your own creations.
